We had the little rumps last night - YUM.  Last week I made patties with the mince.

The Patties - adapted from a Donna Hay recipe.

Combine 500g lamb mince, 1/2 cup fresh breadcrumbs, 1 finely chopped red onion, 1/2 tsp ground cumin, 1 tsp finely chopped rosemary leaves and salt and pepper in a bowl and use wet hands to form into patties. Place on baking paper in a dish and refrigerate for at least ten minutes. Heat a pan (or we used bbq flat plate) to medium heat, add a splash of olive oil and cook patties on one side for three minutes. Turn them and place a slice of fresh mozzarella and a slice of tomato on each pattie to warm and melt, while the pattie cooks for another three minutes or until cooked through.  

These were moist and delicious and I served them with fried potatoes (on the same bbq plate) and roasted cauliflower and broccoli sprinkled with cumin seeds with some hollandaise sauce.
